With so many innovations at SIAL 2016 food fair and such a high rate of failure in the food industry, I was often disappointed by products claiming to be innovative.
At least one of those novelties really blew me away : Courgetti Nests by Fiordelisi.
The product consists of sun-dried zucchinis with a process that has required 4 years of research and development. Producing 10 g of “courgetti nests” requires one medium zucchini and 20 g is considered a portion for one adult (one can debate whether 20 grams are really enough; for me it surely wasn’t when I did taste).
The zucchinis (which can be cooked like pasta) are delicious and unlike any ready-to-cook product I had ever tasted before.
I’d bet a few bucks on the future success of this product if it weren’t so expensive. The nests are available at Sainsburys for the moment (in London) where it sells for 1.75£ (ca. 2€) for 20 grams (which ca. 100€/kg).
